What Makes This Fried Chicken So Crispy?
Fried chicken gets its crispy texture from a combination of factors:
1: The coating: A coating made of flour, cornmeal, or breadcrumbs helps to create a crispy exterior on the chicken.
2: The oil: Using a high-smoke point oil, such as vegetable or peanut oil, at the right temperature (around 350-375°F) ensures that the chicken is cooked quickly and evenly, resulting in a crispy texture.
3: The method: Typically, the chicken is first dipped in a wet mixture (such as buttermilk or egg wash) before being coated in the dry mixture. This helps the dry coating adhere to the chicken and creates a crispy texture.
4: The double-frying: A technique of frying the chicken twice, first at a lower temperature and then at a higher temperature, helps to cook the chicken through while also creating a crispy exterior.
5: The pressure-frying: A method of frying the chicken under pressure which ensures that the chicken is cooked quickly, evenly, and at a high temperature, resulting in a crispy texture.

How to Make Crispy Fried Chicken
Instructions:
In a shallow dish, mix together the flour, salt, pepper, and paprika (if using).
In a separate shallow dish, beat the eggs.
Place the chicken in the buttermilk to soak for at least 30 minutes (or up to overnight in the refrigerator).
Heat about 1/2 inch of oil in a large, deep skillet or Dutch oven over medium-high heat until a thermometer inserted into the oil reaches 350°F.
Remove the chicken from the buttermilk and let any excess liquid drip off.
Dredge the chicken in the flour mixture, shaking off any excess.
Dip the chicken in the beaten eggs, then again in the flour mixture.
Carefully place the chicken in the hot oil and fry for about 8-10 minutes on each side, until golden brown and cooked through.
Remove the chicken from the oil and place on a wire rack or paper towels to drain.
Serve hot and enjoy!
Note:
Do not overcrowd the pan while frying the chicken, it will lead to steaming rather than frying and the crust will not get crispy.
How to Store Fried Chicken
Fried chicken should be stored in an airtight container or wrapped in foil or plastic wrap to keep it fresh. It should be placed in the refrigerator and consumed within 3-4 days. To reheat, you can use an oven, a microwave, or a skillet. Avoid reheating fried chicken in a microwave as it can become rubbery.

A lot of trouble and time for crispy chicken. I’ve been frying crispy chicken for 40 years and only used flour as coating and crisco for oil.
ReplyDelete( I use grape seed oil now). So easy and crispy!
